Paul's Home Made Chicken Soup  12/28/08

Roast 2 -3 chicken legs & thighs , depending on size to done, let cool on the side while you take a big pot, put in a 2 quarts of water in it, heat medium.

open 1 can of each, sliced carrots, short string beans, peas, whole corn, cooked onions, cooked chunked potatoes, drain each can before adding to pot.

take cooled cooked chicken , part meat into small pieces, put in pot.

make gravy from the chicken roasting pan with ( Flour / COLD Water mixed ) to thicken, then add gravy to pot.

heat all for 15 minutes at medium heat, add salt, pepper to taste.

then add 1 cup of elbow macaroni , stir in slowing, so they won't stick to each other.

move heat to low, stir lightly every 5 minutes, add extra salt, pepper to taste, add some water if desire, heat about 15 minutes till done .


I made Duck Soup 2 weeks ago, the same way as above, came out a bit tastier than the chicken did. 


6 & 12 Bean Soup, both have always been a favorite of mine, good winter time food, later I'll try to drum some up and add the info here. it's allot like my chicken soup recipe minus the chicken & some macaroni, need to find the 6 bean starter mix at a store if possible.


In the past I made some mean spaghetti sauce, to bad it doesn't come out the same way all the time.


When I spend 5 yrs in Manhattan, Friday was Manhattan clam chowder day, the best. I always order out that day.  NYC pizza was top shelve also, what memories.


When I lived in California yrs ago,  I noticed home made Sour Dough Bread & home made Whole Grain Bread was big out there.

 I learned to make some killer Salsa when I lived in Cal., 7 things I think, to make it.  1) halopinia peppers, 2) onions, 3) cilantro, 4) tomatoes , 5) garlic , 6) & 7) I'll have to remember, maybe it was 5 things, but it was fresh & tasty,  just use a blender, hit the chop button a couple of times only. Make when you need only, only keeps fresh for 2 days in refrigerator.

Artichoke soup was big there too.


For yrs I've made many types of breads, all came out well, allot of fun experimenting with them.
